These muffins are grain free, dairy free, and refined sugar free, making them perfect for a healthy part of your breakfast, snack, or even dessert. Enjoy with your favorite nut butter drizzled on top while they’re still warm.
Paleo banana nut muffins
{makes 8 muffins & can easily be doubled}
2 ripe bananas, peeled & mashed
2 eggs at room temperature
1 tablespoon melted coconut oil
1 teaspoon vanilla extract
1/4 cup of almond butter
1 tablespoon coconut sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/4 cup coconut flour
pinch of salt
1/4 cup walnuts, roughly chopped
*Optional - 1/4 cup dairy free chocolate chips
1. Preheat the oven to 350 degrees
2. Line a muffin tin.
3. Peel and mash the bananas.
4. Add the eggs, coconut oil, vanilla, almond butter and coconut sugar to the bowl with bananas.
5. In a separate bowl, combine the baking powder, baking soda, cinnamon, coconut flour and salt.
6. Add the dry mixture into the wet mixture.
7. Mix just until combined. Add the walnuts
8. Fill muffin liners half way.
9. Bake for 18-20 minutes.
