This soup is one for the books! It comes together in just under 30 minutes and is packed with flavor. One of my good friends always makes this soup and I have fond memories eating it at their Christmas party. When I woke up this morning, I knew that I wanted to create my own spin on it. I really wanted to find a gluten free tortellini but didn't see anything at my store. I'll keep looking, but let me know if you have found one that you enjoy. I would eat this soup without the tortellini during a whole30 and still be completely satisfied. Cheers to #foodfreedom!
Sausage & Tomato Tortellini Soup
Prep time: 5 minutes
Cook time: 20 minutes
Total time: 25 minutes
1lb sweet Italian ground sausage
1 tablespoon of avocado oil
1 medium sweet onion, diced
4 garlic cloves, minced
1, 28oz can of crushed fire roasted tomatoes (Muir Glen organic is my fav)
1 quart of chicken stock (I use costco's organic chicken stock. Ingredients are great)
2 cups of water
A handful of fresh basil, rolled up and chopped
3 handfuls of fresh spinach
1-1/2 teaspoons of salt
1/2 teaspoon pepper
1/2 teaspoon oregano
1/2 teaspoon red pepper flakes (omit if you choose)
1, 9oz package of cheese tortellini (I used Buitoni brand)
Make the soup
1. In a dutch oven or large pot, brown the sausage in the oil over medium heat.
2. Once the sausage is brown, transfer to a paper towel lined plate using a slotted spoon.
3. In the same pot, saute the onion 6-8 minutes.
4. Add the garlic and cook for 30 seconds.
5. Add the tomatoes, chicken stock, water, basil, spinach and the spices.
6. Bring to a boil.
7. Once boiling, turn the heat down to low and add the uncooked tortellini and cook 6-8 minutes (if frozen, cook longer)
8. Serve with shredded Parmesan and enjoy!
